You have the correct Hypothesis to the solution of "What makes my Fish curl?".

The Water or Moisture  from your hand will cause the fish to curl.

If you did some experimenting you may have noticed that placing your fish on a damp paper towel will also make it curl regardless if the paper towel is warm or cold. So Heat is NOT the correct answer.
